This is one of our all-time favorite recipes for plan-ahead lunches. On Sunday, we make a couple batches of this recipe (separate mixing bowl for each loaf), bake them, and portion them out for the week’s lunches. That way, during the busy week, all we have to do is grab and go.
If you really want to plan ahead you could even freeze some of the recipe for meals beyond the next few days.
Ground turkey breast can sometimes be a bit bland by itself, so the onion, Worcestershire sauce, and tomato sauce really help to liven it up. Served along-side steamed veggies and brown rice, this is a very filling meal!
- 16 oz ground turkey breast, 99% fat-free
- 1 egg white
- 1/4 cup (20g) rolled oats
- 1 tbsp Worcestershire sauce
- 1/2 medium onion, diced
- 1/2 can tomato sauce (7.5 oz)
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 tsp Italian seasoning
Mix all ingredients (we mix using our hands) and mold into a meatloaf form on top of a lightly oiled baking sheet. Pour tomato sauce on top of formed meatloaf. Bake at 350 degrees for 25-30 minutes or until the juices run clear. Makes 4 servings.
